I haven't messed with the Touch that much so I'm not sure but......it is the same as computers. The most commonly used versions right now are Microsoft office 2003....and the newer one 2007. Thinking about it....I doubt the touch is pre-loaded with 07.

there isnt a difference this is for the ones that need it because a custom rom was without it for whatever reason.
