1. yes you can do that on the touch all you need is the htc home customizer version 0.8 found here:

2. and for the last part i think you mean the appointments pugin,tasks plugin etc.... go to start/settings/personal/today/plug-ins section (2nd tab on bottom) and than click the ones that you dont want.
